Workshops demonstrate healthy meal preparation

(Plain Press, December 2016) Neighborhood Family Practice (NFP) Wellness Coordinator Cheryl Sara, RN, shared tips and recipes at two classes held at the Neighborhood Family Practice Ridge Road Community Health Center on November 17th. Those in attendance, fifteen people in the first class and about eight in the second, watched as Sara prepared a number of dishes. NFP Community Engagement Coordinator Astrid Smith and NFP Director of Community Engagement Megan Meister made sure that participants could taste samples of the dishes Sara was preparing, offering ample helpings of the various dishes as they were prepared.

Sara made a pumpkin dip from a can of pumpkin, vanilla pudding mix, and a lite whip cream. Participants scooped up the dip with graham crackers. Other dishes Sara demonstrated included a salad featuring raw Brussel sprouts, carrots and romaine lettuce, and a kale salad with diced apples, onions and a dressing made from maple syrup, vinegar, oil and a dash of salt and pepper.

Sara also offered tips for cooking turkey, stuffing, and low calorie pumpkin pie. She urged participants to look for recipes in Cooking Light or Weight Watchers magazines. She also said she found recipes on the American Heart Association and Cooking Matters websites. Sara says she picks recipes that are easy and quick to make and involve just a few ingredients. She said a number of the recipes chosen for the class involved ingredients that were now on sale at one of the local grocery stores.

Each participant attending the workshops received a free turkey as well as a meat thermometer. They also received a booklet with Healthy Holiday Recipes and a number of the recipes that were demonstrated in the class including one for a pie dough.

Sara says she plans another workshop this winter on cooking with a crock pot. The workshops were made possible through the support of Molina Health.
